Easy Chili Garlic Noodles

Sometimes you just need a cozy, easy, and super freaking delicious meal. This is that meal. It takes approx. 15 minutes to make and tastes like it should have been much more involved to make than it is. I love that it has some sweet, salty, and spicy flavors. My favorite mushroom in this dish is pioppino because they add a nice crunch to complement the the texture of the noodles and makes for a really unique mouthfeel. That said, if pioppinos aren’t your thing or we don’t have them available, any kind of oyster mushroom would be delicious in this as well.

Ingredients:

8-10oz Mushroom of choice (our favorites for this recipe are pioppino or blue oyster)

2 packages Ramen Noodles

4 Tbs Soy Sauce

1 tsp Rice Vinegar

2 tsp Sesame Oil

2 tsp Honey

1 tsp Sesame Seeds

1 tsp Gochugaru (crushed red pepper flakes could work if you don’t have access to gochugaru, add more gochugaru for a spicier dish)

1 Scallion, sliced

3 Garlic Cloves, minced

3 Tbs Vegetable Oil

Directions:

  1. Heat some sesame and vegetable oil in a pan - just enough to thinly cover the base of the pan

  2. Add mushrooms and cook for approx. 10 minutes until brown and slightly crunchy on the ends

  3. While mushrooms are cooking, bring pot of water to boil and add ramen noodles

  4. In a bowl, combine soy sauce, rice vinegar, sesame oil, honey, sesame seeds, gochugaru, scallions, & garlic

  5. Once mushrooms are cooked, remove from pan. Then add 3 Tbs vegetable oil to the pan and heat.

  6. Carefully add hot oil to bowl and mix

  7. Pour mixture onto cooked ramen noodles, add mushrooms, stir and enjoy!
